Cows
Heritage Cattle as defined here, are cows which have a historical or contemporary use in the US, and which are still obtainable, and free of genetic or behavioral issues which interfere with sustainability. There are literally hundreds of breeds of cows, and many are so rare that they are not obtainable, and others are bred in such a way that they require human intervention to either breed or calve.
